Eating Cicadas In Nyack

It was just a matter of time before recipes to enjoy the swarming bugs started to appear on the internet. Think of it as a once in 17 year culinary delight. Most bug eaters liken them to shrimp or crab, making sense as they are all in the arthropod family.
To that end, they recommend harvesting the little crawlers immediately after they shed their exoskeleton just as they exit the ground, but before the young bugs can fly. They will be white at this point and since the new exoskeleton hasn’t hardened yet, very tender, like a soft shelled crab. Early morning seems to be the time with the highest percentage of emergers. The preferred method of killing your bounty is freezing, I guess throw the bag in the freezer or a cooler filled with ice.
For an appetizer or salad garnish you can season with salt and spices, toss with olive oil, and bake until crunchy.
As a main course, deep fry your cicadas and stuff them in a taco, tostada, or pita.
And for dessert, just boil them like shrimp, dip in chocolate, and freeze. Supposedly great alone or added to ice cream.
Cicadas where purported to be one of Aristotle’s favorite foods. I doubt I’ll be dining like the Gods any time soon here in Valley Cottage, but then, no cicadas have shown up here yet to tempt me.
